Black Cap Jalapeño Ramp Hot Sauce is our seasonal, small-batch release built around one of the Midwest’s most fleeting ingredients: wild ramps. Harvested at their peak in early spring, ramps bring a distinctly bold, savory character — often described as a cross between garlic, onion, and leeks — with a depth and aroma that set them apart from anything cultivated.

We pair fresh jalapeños with these foraged ramps and preserve them through our natural fermentation process, allowing that signature ramp flavor to deepen, mellow, and evolve over time. Fermentation not only extends the life of this short-lived ingredient, but also enhances its complexity — balancing its sharp, allium-forward bite with subtle tang and umami.

Because ramps are only available for a brief window each year, this sauce is intentionally limited. Each batch captures that moment in the season — once it’s gone, it won’t return until the following spring.
